oatmealcookies-thumbAs a foodie, I’m always looking for ways to turn my favourite recipes into vegan ones.

I’m also on the lookout for new recipes that can be easily veganized.

So when this cookie recipe from Dr. Oz came across my Facebook, I got excited. With the only animal ingredients being milk and eggs, this recipe was simple to make vegan. Plus — it gave me an opportunity to try out my favourite new peanut butter — White Chocolate Wonderful — in cookie form:

Vegan Oatmeal Peanut Butter Cookies

These vegan oatmeal peanut butter cookies are hearty and make for a great snack.

Ingredients:

2 ripe bananas

1/2 cup peanut butter

2 tbsp. almond milk

1 tsp. vanilla extract

2 tbsp. agave nectar (Agave Nectar is a great alternative to white sugar)

1 tbsp. arrowroot power mixed into 3 tbsp. water (egg substitute)

2 1/2 cups oats

1/4 whole wheat flour

1/4 tsp. cinnamon

Directions:

Preheat oven to 350F. Mash banana and add peanut butter, almond milk, vanilla extract, agave nectar and arrowroot powder mixture. Combine. Add in oats, flour and cinnamon and mix until well combined.

Drop tablespoons of batter onto a cookie sheet lined with parchment paper. Cookies will not spread so don’t be afraid to put them close together. Bake 15 minutes or until golden brown. Cool.

These cookies are even better the second day! Enjoy!
